Let marshmallow set for 4-6 hours before cutting into shapes. To cut, use a sharp knife on a surface dusted with powdered sugar.

4. Use a Larger Mixing Bowl

When making your marshmallows, it's important to have a large mixing bowl. This will allow you to mix more of the marshmallow mixture at one time, and it will also help to prevent the marshmallow from melting too quickly. You can find a large mixing bowl at any store that sells kitchen supplies, and it's usually less expensive than a new mixer.

Place your egg whites into the bowl of a stand mixer fitted with the whisk attachment. Add sugar to the mixture - just barely. Remove the metal bowl from the mixer and place it over (not on - just like a bain marie style) simmer water until it reaches 160 degrees - whisking constantly. Transfer the bowl back to the stand mixer and beat on high until mixture cools, doubles in volume, and forms stiff peaks, about 10 minutes.

Stir in any flavorings you'd like to use, and then transfer the marshmallow mixture to a piping bag. If desired, coat your hands and work surface with vegetable shortening before kneading the mixture to loosen it.

Pour the liquid into your prepared pans, spreading it out evenly with a rubber spatula. Allow the peeps to dry for at least two hours before cutting them into their desired shapes. After cutting, generously dust the marshmallows in powdered sugar to keep them from sticking together when stored. You can also toss them in the same powdered sugar to eat as they are, or you can draw on their faces with black gel icing.

5. Add More Gelatin

If you find yourself making too few peeps or your marshmallow isn't puffy enough, try adding more gelatin. Gelatin is a gut-healing ingredient that thickens and whips like flour does, making it an excellent addition to any recipe.

Add 1/3 cup of water to a mixing bowl and sprinkle a packet of gelatin on top. Allow the gelatin to bloom for a few minutes before continuing with your recipe. Then, use the gelatin as directed in your recipe.

6. Add More Sugar

Unfortunately, many of the children in his study are now adults and have no way of knowing what their results from the marshmallow test will be.
